These Vidal grapes are harvested based on concentrations of flavor,
deep-frozen post-harvest and put into the press as frozen clusters
of fruit. As the grapes are pressed, the liquid sugar drains out while
the frozen water remains inside the press. This process creates a thick,
syrup-like grape juice that will slowly ferment to create a rich
dessert wine.

Tropical fruit overtones are complemented by the oak and butter components
of this wine. Barrel fermenting and aging with the lees help to give this
wine its texture. Great with grilled salmon or a creamy pasta dish.
